Ingredients

  • 1 c. flour
  • 1 1/2 tsp. cinnamon
  • 1 tsp. baking powder
  • 3/4 tsp. salt
  • 1 c. butter or margarine
  • 1 c. firmly packed brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2 3/4 c. uncooked old fashioned oats
  • 2 c. shredded carrots
  • 1 c. chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a cookie sheet.
  3. In a small bowl, combine flour, cinnamon, baking powder, and salt.
  4. In a large bowl, beat together butter and brown sugar until light and fluffy.
  5. Blend in egg and vanilla.
  6. Add dry ingredients; mix well.
  7. Stir in oats, shredded carrots, and chopped nuts.
  8. Drop rounded tablespoonfuls of dough onto the prepared cookie sheet.
  9. Bake for 15 to 17 minutes until golden brown.
  10. Allow cookies to cool on a wire rack.
  11. Store in a loosely covered container.
