Ingredients

  • 3 eggs
  • 1 c. vegetable oil
  • 3 tsp. vanilla
  • 1 tsp. salt
  • 1/4 tsp. double acting baking powder
  • 3 tsp. ground cinnamon
  • 1 c. chopped filberts or walnuts
  • 2 c. sugar
  • 2 c. grated, peeled raw zucchini
  • 3 c. all-purpose flour
  • 1 tsp. baking soda

Instructions

  1. Beat eggs until light and foamy.
  2. Add sugar, oil, zucchini, and vanilla to the eggs and mix lightly but well.
  3. Combine flour, salt, baking soda, baking powder, and cinnamon, then add to the egg/zucchini mixture.
  4. Stir all until well blended, then add nuts.
  5. Pour the batter into two greased 9 x 5 x 3-inch loaf pans.
  6. Bake for 1 hour in a 350°F oven.
  7. Remove pans from the oven and cool on a rack.
