African Chop
Ingredients
- 1 (3 lb.) chicken, cut up ⓘ
- 3 onions (medium) ⓘ
- 3 large tomatoes (fresh) or 1 can tomatoes ⓘ
- salt and pepper to taste ⓘ
- ground red hot chilies to taste, (optional) ⓘ
- 1 1/2 c. water ⓘ
- 1 Tbsp. flour ⓘ
- 1/2 c. crunchy peanut butter or curry (optional) ⓘ
- 1 1/2 c. shredded coconut ⓘ
- 2 c. cheese ⓘ
- 3 tomatoes, chopped ⓘ
- 4 to 6 green onions, chopped ⓘ
- 2 c. bananas, chopped
- 2 c. pineapple, chopped ⓘ
Instructions
- Cut up chicken and fry in oil with salt and pepper.
- Put onion and tomatoes in blender 1 minute.
- Add to chicken and cook 5 minutes.
- Mix flour and water and add to chicken stew.
- Cook until tender.
- Serve over hot rice.
- Then add (as desired) last 7 ingredients set out for people to add to rice and stew.
- Makes 4 to 5 servings.
