Ingredients

  • 1 lb ground beef
  • 2 large onions, chopped
  • 1 green pepper, chopped
  • 16 oz can tomatoes
  • 1/2 cup cooked rice
  • 2 teaspoons salt
  • 1 to 2 teaspoons chili powder
  • 1/8 teaspoon pepper

Instructions

  1. Heat oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef with chopped onions and green pepper.
  3. Drain off excess fat from the skillet.
  4. Stir in canned tomatoes, cooked rice, salt, chili powder, and pepper.
  5. Heat the mixture through.
  6. Pour the mixture into a greased 2-quart casserole dish.
  7. Cover and bake in the preheated oven for 1 hour.
  8. Add sharp Cheddar cheese to taste before serving.
