Ingredients

  • 1 lb. fresh, raw, peeled and cleaned shrimp
  • 1 qt. fresh tomatoes, peeled and chopped
  • 2 (16 oz.) cans chopped tomatoes
  • 1 bell pepper, chopped
  • 1 large onion, chopped
  • 2 garlic cloves, chopped
  • 1 Tbsp. olive oil
  • 2 bay leaves
  • 1/2 cup fresh parsley
  • creole seasoning to taste

Instructions

  1. Cook all ingredients except spices and shrimp in oil for 5 minutes.
  2. Add 1 cup of water and cook down for 30 minutes.
  3. Add remaining ingredients except shrimp, cover, and simmer for 30 to 40 minutes.
  4. Add more water if needed during simmering.
  5. Add shrimp and cook for an additional 20 minutes.
  6. Serve over cooked long grain rice.
