Ingredients

  • 2 c. unsifted flour
  • 1 tsp. salt
  • 1 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 2 c. sugar
  • 4 eggs
  • 1 1/2 c. cooking oil
  • 2 c. grated carrots
  • 1/2 c. walnuts, chopped
  • 1/2 c. raisins
  • 1 (4 oz.) can crushed pineapple

Instructions

  1. Combine flour, salt, baking soda, baking powder, and cinnamon in a bowl.
  2. Add sugar and all other ingredients to the dry mixture.
  3. Mix well until all ingredients are fully incorporated.
  4. Pour the batter into a greased or lined baking pan.
  5. Bake at 355°F (180°C) for 55 minutes.
  6. Cool in the pan for 30 minutes.
  7. Once completely cooled, spread your preferred frosting or topping over the cake.
