Ingredients

  • 1/2 lb. cream cheese
  • 1 egg
  • 1/3 c. sugar
  • 1/8 tsp. salt
  • 6 oz. semi-sweet chocolate morsels
  • 1 1/2 c. flour
  • 1 c. sugar
  • 1/4 c. baking cocoa
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 c. vegetable oil
  • 1 c. water

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Beat together cream cheese, egg, 1/3 cup sugar, and 1/8 teaspoon salt until smooth.
  3. Add 6 ounces of semi-sweet chocolate morsels to the mixture and set aside.
  4. In a separate bowl, combine 1 1/2 cups flour, 1 cup sugar, 1/4 cup baking cocoa, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Add 1/3 cup vegetable oil and 1 cup water to the dry ingredients and mix until smooth.
  6. Pour about one-third of the chocolate batter into cupcake liners in a muffin tin.
  7. Top each with a spoonful of the cream cheese mixture.
  8. Cover with remaining chocolate batter.
  9. Bake for approximately 25 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow cupcakes to cool before serving.
