Ingredients

  • 1 1/2 cups mashed ripe bananas
  • 1 1/4 cups sugar
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1 tablespoon vanilla
  • 2 1/4 cups flour
  • 3/4 cup quick-cooking oats
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon ground nutmeg

Instructions

  1. In a mixing bowl, beat mashed bananas, sugar, eggs, vegetable oil, and vanilla until well combined.
  2. In a separate bowl, combine the flour, quick-cooking oats, ground cinnamon, baking powder, baking soda, salt, and ground nutmeg.
  3. Gradually stir the dry ingredients into the banana mixture until just combined.
  4. Fold in the semi-sweet chocolate chips and chopped walnuts.
  5. Pour the batter evenly into two greased 8 x 4 x 2-inch loaf pans.
  6. Bake at 350°F (175°C) for 55 minutes or until a toothpick inserted near the center comes out clean.
  7. Allow the loaves to cool for 10 minutes before removing from pans and transferring to wire racks.
