Ingredients

  • 6 c. bread crumbs
  • 1 c. finely cut celery
  • 2 medium onions
  • 3/4 tsp. poultry seasoning
  • 1/2 tsp. salt
  • 1/4 tsp. dried savory
  • 1/8 tsp. powdered rosemary
  • 2 1/4 c. beef broth

Instructions

  1. Clean the meat thoroughly of all blood, then soak it overnight in cold salt water.
  2. Drain the meat well the next morning.
  3. Dredge the meat in flour, salt, and pepper.
  4. Brown the meat in deep fat in a skillet for about thirty minutes, ensuring both sides are well browned.
  5. Place the browned meat in a roaster, adding garlic (powder or solid).
  6. Prepare the all-game dressing by mixing bread crumbs, finely cut celery, onions, poultry seasoning, salt, dried savory, and powdered rosemary.
  7. Add beef broth to the mixture and use as stuffing or a side dish.
