Ingredients

  • 3 lb. beef, pork, veal, cut small
  • 1/2 cup flour
  • 1/4 lb. butter
  • salt to taste
  • pepper to taste
  • 4 eggs, beaten
  • 2 cups rice
  • 3 cans cream of chicken soup
  • 2 cans cream of mushroom soup
  • 3/4 lb. butter

Instructions

  1. Mix flour with the small-cut meat.
  2. Brown and cook the meat in 1/4 pound of butter until tender.
  3. Add salt and pepper to taste.
  4. Cook 2 cups of rice according to package directions.
  5. Add cooked rice and beaten eggs to the meat mixture, along with the cans of cream of chicken and mushroom soups.
  6. Melt 3/4 pound of butter and add cracker crumbs.
  7. Line pans with the crumb mixture, saving some for the top layer.
  8. Place sliced almonds on top of the assembled casserole.
  9. Bake at 350°F (175°C) for 1.5 hours.
  10. Use a 9 x 13-inch pan and an 8 x 11-inch pan. Serves 20.
  11. This dish freezes well.
