Almond Rice
Almond Rice combines tender rice with green peppers, onions, mushrooms, pimientos, and toasted almonds for a savory, nutty dish perfect for family dinners or special occasions.

- Place margarine, chopped green pepper, and chopped onion in a casserole dish. Bake at 325°F for 15 to 20 minutes.
- Add uncooked rice, one can of consomme soup, and one can of water to the casserole. Cover and bake for 40 to 45 minutes.
- Add one can of consomme soup (no water), chopped mushrooms, and chopped pimientos to the casserole. Return to oven and bake for another 35 to 40 minutes.
- Sprinkle with almonds or pecans before serving.
