Almond Rice combines tender rice with green peppers, onions, mushrooms, pimientos, and toasted almonds for a savory, nutty dish perfect for family dinners or special occasions.

Ingredients

  • 1 stick margarine
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1 1/2 cups uncooked rice
  • 1 can consomme soup
  • 1 can water
  • 1 small can chopped mushrooms
  • 1 can chopped pimientos
  • Almonds or pecans for sprinkling

Instructions

  1. Place margarine, chopped green pepper, and chopped onion in a casserole dish. Bake at 325°F for 15 to 20 minutes.
  2. Add uncooked rice, one can of consomme soup, and one can of water to the casserole. Cover and bake for 40 to 45 minutes.
  3. Add one can of consomme soup (no water), chopped mushrooms, and chopped pimientos to the casserole. Return to oven and bake for another 35 to 40 minutes.
  4. Sprinkle with almonds or pecans before serving.
