Ingredients

  • 8 oz. lasagna noodles
  • 2 slices whole wheat bread
  • 3 egg whites
  • 1 Tbsp. lemon juice
  • 1/4 tsp. garlic powder
  • 4 oz. shredded Swiss cheese
  • 2 (10 oz.) packages spinach
  • 3 Tbsp. Parmesan cheese
  • 2 tsp. oregano
  • 1/4 tsp. pepper
  • 32 oz. jar spaghetti sauce

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 9 x 13-inch baking pan.
  3. Cook the lasagna noodles according to package instructions.
  4. Drain the noodles and spread them evenly in the prepared pan.
  5. Cover the noodles with half of the spaghetti sauce.
  6. In a bowl, whisk egg whites with lemon juice, garlic powder, oregano, and pepper.
  7. Mix in the shredded Swiss cheese, drained spinach, crumbled bread slices, and Parmesan cheese.
  8. Spread the spinach and cheese mixture over the sauce layer in the pan.
  9. Pour the remaining spaghetti sauce over the top.
  10. Bake uncovered for about 30 minutes, until bubbly and golden.
