Ingredients

  • 1 1/2 cups brown sugar
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups raw rhubarb, diced
  • 2/3 cup liquid shortening
  • 1 cup sour milk
  • 1 teaspoon vanilla
  • 2 1/2 cups flour, sifted
  • 1/2 cup chopped nuts (optional)

Instructions

  1. In a bowl, blend all ingredients together.
  2. Pour the batter into 2 well-greased and floured 8 x 4-inch loaf pans.
  3. In a small bowl, mix together 1/2 cup sugar and 1 tablespoon butter or margarine.
  4. Sprinkle the sugar and butter mixture over the unbaked bread.
  5. Bake in a preheated 325°F oven for 45 to 60 minutes or until firm to touch.
