Ingredients

  • 3/4 cup butter
  • 1 1/2 cups packed brown sugar
  • 2 tablespoons water
  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons baking soda
  • 2 packages Andes mints
  • 12 ounces chocolate chips
  • 2 eggs

Instructions

  1. In a heavy saucepan over low heat, combine butter, brown sugar, and water. Heat until butter melts.
  2. Add chocolate chips to the saucepan and stir until partially melted.
  3. Remove from heat and continue stirring until totally melted. Pour into a large mixing bowl and cool for 10 minutes.
  4. Preheat oven to 350°F (175°C).
  5. In a separate bowl, whisk together flour, salt, and baking soda.
  6. Add eggs to the cooled chocolate mixture and beat well.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  8. Chop Andes mints into small pieces.
  9. Stir chopped Andes mints and chocolate chips into the cookie dough.
  10. Drop spoonfuls of dough onto ungreased baking sheets.
  11. Bake for 8-10 minutes or until edges are golden.
  12. Allow cookies to cool on baking sheets for a few minutes, then transfer to wire racks to cool completely.
