Ingredients

  • 3 lb. chicken
  • 1/2 cup flour
  • 2 tsp. paprika
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 cups bread crumbs
  • 1 large egg white
  • 1/2 cup milk
  • 6 Tbsp. butter

Instructions

  1. Remove skin from the chicken.
  2. Mix flour, paprika, salt, and pepper on a sheet of waxed paper.
  3. Place bread crumbs on another sheet of waxed paper.
  4. Beat egg white and milk in a pie tin.
  5. Coat chicken in the flour mixture, then dip into the egg mixture, and coat with bread crumbs.
  6. Arrange chicken pieces in a large pan.
  7. Bake in a 475°F oven for 25 minutes.
  8. Turn the chicken and bake for an additional 20 minutes.
