  • 1/2 lb. salami, sliced thin
  • 1 lb. boiled ham, sliced thin
  • 1 lb. Provolone cheese
  • 1 can tuna fish in water
  • 1 lb. fresh or frozen shrimp
  • 6 hard-boiled eggs
  • 2 jars marinated mushrooms (keep oil)
  • 1 jar marinated eggplant (keep oil)
  • 1 can anchovies (if desired)
  • 2 jars marinated artichoke hearts (keep oil)
  • 1 Bermuda onion, sliced
  • 1 can che-che beans
  • 2 jars roasted red peppers
  • 1 jar Tuscan green peppers
  • 1 can large black olives or 1 lb. Italian salad olives

Instructions

  1. Line the edge of a large platter with salami slices.
  2. Cover the entire platter with iceberg lettuce.
  3. Roll each slice of boiled ham and arrange among the lettuce.
  4. Cut Provolone cheese into strips and place partially under the lettuce leaves, resembling rolled ham.
  5. Slice hard-boiled eggs in half and arrange on the lettuce.
  6. Place chunks of canned tuna fish on top of the lettuce.
  7. Add marinated mushrooms, eggplant, artichoke hearts, and roasted red peppers on top.
  8. If desired, include anchovies and green or black olives on the platter.
  9. Slice Bermuda onion and arrange on the platter.
  10. Place che-che beans in small mounds around the platter.
  11. Top the entire arrangement with cooked shrimp on the very top.
