Ingredients

  • 2 1/4 cups sifted flour
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 4 tablespoons shortening
  • 1 1/2 cups sugar
  • 1 egg
  • 1 cup milk
  • 1/2 cup applesauce
  • 1 cup blueberries

Instructions

  1. Sift together the flour, baking powder, salt, nutmeg, and cinnamon.
  2. Cream the shortening and sugar until light and fluffy; beat in the egg.
  3. Alternately add milk and the flour mixture to the creamed mixture, stirring gently.
  4. Stir in the applesauce.
  5. Toss blueberries with a small amount of flour, then fold them into the batter while keeping them frozen.
  6. Fill muffin tins halfway with batter.
  7. Bake at 400°F (200°C) for about 20 minutes or until golden brown.
