Ingredients

  • 3 eggs
  • 1 3/4 cups sugar
  • 1/3 cup oil
  • 2 cups flour
  • 1 1/2 teaspoons cinnamon
  • 1/2 cup raisins
  • 1 teaspoon soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla
  • 5 to 7 sliced apples (about 4 cups)
  • 1/2 cup chopped nuts

Instructions

  1. Use a large bowl and stir the ingredients by hand.
  2. Combine eggs and sugar in the bowl.
  3. Add oil, flour, cinnamon, soda, and salt to the mixture.
  4. Mix well until batter is thick.
  5. Add chopped nuts, raisins, and sliced apples to the batter.
  6. Spread the batter evenly in a lightly greased 9 x 13-inch pan.
  7. Bake at 350°F (175°C) for 1 hour.
  8. Allow the cake to cool, then drizzle with a glaze made of powdered sugar mixed with milk or boiling water.
