Apple Ginger Coffee Cake

Ingredients

  • 8 c. flour
  • 1/2 tsp. salt
  • 1 Tbsp. cinnamon
  • 3 c. brown sugar
  • 2 Tbsp. ground, fresh ginger root
  • 2 c. white sugar
  • 2 1/2 c. canola oil
  • 1 Tbsp. baking soda
  • 1 Tbsp. baking powder
  • 6 eggs
  • 6 c. buttermilk
  • 1 Tbsp. cinnamon
  • 2 c. walnut pieces

Instructions

  1. With an electric mixer on medium speed, mix together the flour, salt, cinnamon, brown sugar, ginger root, white sugar and canola oil.
  2. Take 2 cups of this mixture out and reserve for the crumble topping.
  3. To the remainder, add the baking soda, baking powder, eggs and buttermilk.
