  • 2 medium apples, pared, cored and sliced
  • 1/2 cup packed brown sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • 1/4 teaspoon cinnamon
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/2 cup buttermilk
  • 1/4 cup molasses
  • 2 tablespoons cooking oil
  • 1/2 teaspoon ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup all-purpose flour
  • 1/4 teaspoon nutmeg

Instructions

  1. Combine apples, brown sugar, water, lemon juice, and cinnamon in a saucepan.
  2. Cover and cook until apples are tender.
  3. In a separate bowl, whisk together granulated sugar, egg, buttermilk, molasses, and cooking oil.
  4. Add all-purpose flour, baking soda, baking powder, nutmeg, and ginger to the wet ingredients and stir until just combined.
  5. Pour the batter over the cooked apples in a baking dish.
  6. Bake at 350°F (175°C) for about 30 minutes or until the top is golden brown.
