Ingredients

  • 8 oz. plain nonfat yogurt
  • 8 oz. can unsweetened crushed pineapple (undrained)
  • 1/2 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/4 tsp. dry mustard
  • 1/4 cup raisins
  • 3 cups diced unpeeled apples
  • 1 tsp. finely chopped crystallized ginger
  • 1 tablespoon honey
  • 2 cups uncooked rotini pasta
  • 1/2 cup shredded carrot
  • 1 cup sliced celery
  • 1/4 cup sliced green onions

Instructions

  1. Thoroughly combine yogurt, crushed pineapple (undrained), salt, garlic powder, dry mustard, chopped crystallized ginger, and honey in a bowl.
  2. Refrigerate the mixture.
  3. Cook the rotini pasta according to package directions, omitting salt.
  4. Rinse the cooked pasta with cold water and drain thoroughly.
  5. Cool the pasta completely.
  6. In a large bowl, combine the cooked pasta, diced apples, shredded carrot, sliced celery, sliced green onions, and the yogurt dressing.
  7. Mix well to combine.
  8. Chill thoroughly before serving.
