Ingredients

  • 2 Tbsp. oil
  • 1 egg
  • 1 c. flour
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. baking soda
  • 1/8 tsp. salt
  • 3 Tbsp. orange juice
  • 1 small apple, peeled and chopped
  • 1/2 c. raisins

Instructions

  1. Beat the oil and egg together; in a separate bowl, mix the flour, baking powder, cinnamon, baking soda, and salt.
  2. Soak the raisins in hot water for 5 minutes, then drain.
  3. Add a small amount of flour to the oil and egg mixture and stir to blend.
  4. Add the orange juice and remaining flour; mix until moistened.
  5. Fold in the chopped apple and soaked raisins.
  6. Pour the batter into a greased loaf pan.
  7. Bake at 350°F (175°C) for 45 minutes or until a toothpick inserted into the center comes out clean.
