- Beat the oil and egg together; in a separate bowl, mix the flour, baking powder, cinnamon, baking soda, and salt.
- Soak the raisins in hot water for 5 minutes, then drain.
- Add a small amount of flour to the oil and egg mixture and stir to blend.
- Add the orange juice and remaining flour; mix until moistened.
- Fold in the chopped apple and soaked raisins.
- Pour the batter into a greased loaf pan.
- Bake at 350°F (175°C) for 45 minutes or until a toothpick inserted into the center comes out clean.
