Ingredients

  • 2 1/2 cups fresh butternut squash
  • 1 1/2 cups apples, pared and cut in large slices
  • 1/4 cup butter or margarine
  • 4 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup nuts (optional)
  • salt to taste

Instructions

  1. Peel the butternut squash and cut into small slices or chunks.
  2. Melt 3 tablespoons of butter.
  3. Mix the melted butter with brown sugar, cinnamon, nutmeg, nuts (if using), and salt.
  4. Place a layer of squash in a 2-quart casserole dish.
  5. Drizzle with the sugar-butter mixture.
  6. Top with a layer of apples, then add more of the butter-sugar mixture.
  7. Repeat layers until all ingredients are used.
  8. Dot the top with the remaining butter.
  9. Cover and bake at 350°F for 45 to 60 minutes until tender.
