  • 1 package strawberry jello
  • 1 scant cup sugar
  • 1 cup evaporated milk
  • 1 Tbsp. lemon juice

  1. Heat the crushed pineapple with juice.
  2. Add the strawberry jello and stir until dissolved.
  3. Add the sugar and heat until very hot, stirring constantly.
  4. Refrigerate the mixture until it is set.
  5. Add lemon juice to the very cold evaporated milk.
  6. Beat the milk until stiff peaks form.
  7. Fold the cooled pineapple mixture into the whipped evaporated milk.
  8. Pour the pineapple and milk mixture into a pie shell and let it cool before serving.
