Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 2 cups zucchini, shredded
  • 2 cups apples, shredded
  • 1/2 teaspoon cinnamon
  • 3/4 teaspoon nutmeg
  • 3 cups flour, sifted
  • 2 teaspoons baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup walnuts, chopped

Instructions

  1. Mix eggs, oil, sugar, and vanilla until well combined.
  2. Add shredded zucchini, shredded apples, sifted flour, cinnamon, nutmeg, and chopped walnuts to the mixture.
  3. Divide the batter evenly into two greased pans.
  4. Bake at 375°F (190°C) for 60 minutes or until a toothpick inserted into the center comes out clean.
