Ingredients

  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 3/4 cup packed brown sugar
  • 1/2 cup water
  • 1 cup rolled oats
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup applesauce

Instructions

  1. In a bowl, mix well the flour, oats, baking powder, salt, and baking soda; set aside.
  2. Beat the egg, brown sugar, applesauce, and water until blended.
  3. Add the wet mixture to the dry ingredients; stir just until moistened.
  4. Pour the batter into a greased 9 x 5 x 3-inch loaf pan.
  5. Bake at 350°F for about 1 hour, until a toothpick inserted in the center comes out clean.
  6. Cool in the pan for 10 minutes, then remove to a rack to cool completely.
