Ingredients

  • 1 large can apricots or 2 small cans apricots
  • 1 large orange gelatin
  • 8 oz Philadelphia brand cream cheese
  • 2 Tbsp butter
  • 1 No. 2 can crushed pineapple
  • handful of small marshmallows
  • finely grated cheese
  • 3 Tbsp flour
  • 1/2 cup sugar

Instructions

  1. Drain the apricots and pineapple, saving all the juice.
  2. Chop the drained apricots until mushy in a food processor.
  3. Dissolve the orange gelatin in 2 cups hot water, then add 1 cup of the reserved fruit juice.
  4. Let the gelatin mixture partially set up.
  5. Add the chopped apricots, crushed pineapple, and small marshmallows to the gelatin.
  6. Allow the mixture to set up completely before serving.

Tips & Substitutions

For a creamier texture, ensure the cream cheese is at room temperature before mixing it into the gelatin. You can substitute the orange gelatin with any fruit-flavored gelatin of your choice, but orange complements the apricots and pineapple well. If you prefer a less sweet dessert, reduce the sugar to 1/4 cup. Experiment with adding nuts or shredded coconut for added texture.

Serving Suggestions

This Apricot Dream Jello is delightful on its own, but you can serve it alongside a light Herb Toast for a nice contrast. Consider garnishing with whipped cream or fresh fruit for added appeal. It pairs beautifully with the Delicious Healthy Strawberry Shake for a refreshing dessert combination that guests will love.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator. The Jello can last up to 3 days. To serve, simply scoop out the desired portion. If you prefer a firmer texture, you can briefly place it in the freezer for about 15 minutes before serving; however, avoid freezing it completely as it may alter the consistency.

Frequently Asked Questions

Can I use fresh apricots instead of canned?

Yes, you can use fresh apricots, but you'll need to cook them down a bit to achieve a mushy consistency similar to canned. Simply simmer peeled and pitted apricots with a little water until soft, then mash them before adding to the gelatin.

Is there a way to make this recipe vegan?

To make a vegan version, you can use plant-based cream cheese and replace the gelatin with agar-agar or a vegan gelatin substitute. Be sure to check the ingredient list to ensure all components are vegan-friendly, including the marshmallows.

How long does it take for the Jello to set?

The Jello typically takes about 4-6 hours to set completely in the refrigerator. For best results, prepare it a day in advance, allowing it to chill overnight so it's perfectly firm when you're ready to serve.
