Ingredients

  • 2 lb. ground beef
  • 3 eggs
  • 1 medium onion, diced
  • 1/4 cup bell pepper
  • 2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 small can tomato paste
  • 1 Tbsp. mustard
  • 2 cups oats
  • 1 can (16 oz.) tomatoes
  • 3 or 4 potatoes, sliced

Instructions

  1. In a large bowl, mix ground beef, eggs, diced onion, bell pepper, salt, black pepper, tomato paste, and mustard.
  2. Add oats and mix well. Place the mixture into a 9 x 13-inch baking pan.
  3. Pat down to 1-inch thickness, leaving at least 2 inches on the sides for the potatoes.
  4. Arrange sliced potatoes on top of the meat mixture.
  5. Pour juice from canned tomatoes over the meat and potatoes.
  6. Bake in an oven preheated to 350°F (175°C) until cooked through, about 45 minutes.
