Ingredients

  • 8 slices bacon
  • 2 lb. lean boneless pork shoulder, cubed
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 2 c. uncooked regular rice
  • 5 envelopes instant chicken broth
  • 1/4 tsp. crushed saffron
  • 6 c. water
  • 1 lb. fresh peas, shelled, cooked, drained and buttered

Instructions

  1. Saute bacon until almost crisp in a large frying pan. Drain on paper towels and set aside.
  2. Pour all bacon drippings into a cup.
  3. Brown the pork cubes slowly in the same pan, a little at a time.
  4. Return 2 tablespoons of bacon drippings to the pan.
  5. Add chopped onion and minced garlic, and saute until soft.
  6. Push the onion and garlic to one side of the pan.
  7. Add rice and saute, stirring constantly, until golden.
  8. Stir in instant chicken broth, saffron, and water.
  9. Heat to boiling and pour the mixture into a 12-cup baking dish.
  10. Top with browned pork and cover.
  11. Bake in a moderate oven (350°F) for 1 hour or until liquid is absorbed and rice is tender.
  12. Fluff up the rice with a fork.
  13. Stand bacon curls in a ring in the center.
  14. Spoon cooked peas around the edge before serving.
