Instructions
- Slice lemon and place over fish to remove fishy taste.
- Add just enough buttermilk to cover the fish and refrigerate for 2 to 3 hours.
- Heat 1 1/2 quarts of oil in a heavy 2 1/2-quart saucepan.
- Drain off the buttermilk from the fish.
- Cut the fish fillets in half and dredge in white flour.
- In another bowl, combine 2 cups of pancake mix and 2 1/2 cups of club soda until the consistency of buttermilk.
- Dip the floured fillets into the batter, allowing excess to drip off into the bowl.
- Deep-fry the fillets for 4 minutes on each side until golden brown.
- Warm the fried fish in a 250°F oven until ready to serve.
