Crispy, golden fish fillets with a light batter, perfect for a comforting meal. Flavored with lemon and fried to perfection, ideal for seafood lovers and family dinners.

Ingredients

  • 3 lb. fish fillet
  • buttermilk
  • 1 lemon
  • 1 1/2 pt. oil
  • white flour
  • 2 c. pancake mix
  • 2 1/2 c. club soda

Instructions

  1. Slice lemon and place over fish to remove fishy taste.
  2. Add just enough buttermilk to cover the fish and refrigerate for 2 to 3 hours.
  3. Heat 1 1/2 quarts of oil in a heavy 2 1/2-quart saucepan.
  4. Drain off the buttermilk from the fish.
  5. Cut the fish fillets in half and dredge in white flour.
  6. In another bowl, combine 2 cups of pancake mix and 2 1/2 cups of club soda until the consistency of buttermilk.
  7. Dip the floured fillets into the batter, allowing excess to drip off into the bowl.
  8. Deep-fry the fillets for 4 minutes on each side until golden brown.
  9. Warm the fried fish in a 250°F oven until ready to serve.
