Ingredients

  • 3/4 cup mayonnaise
  • 1 cup cooked crab
  • 1 tablespoon chopped scallions
  • 1/8 teaspoon cayenne pepper
  • 2 1/2 tablespoons lemon juice
  • salt to taste
  • 48 bread rounds (1 1/2-inch)
  • 2 egg whites

Instructions

  1. Preheat the broiler.
  2. Combine mayonnaise, cooked crab, chopped scallions, cayenne pepper, lemon juice, and salt to taste in a bowl.
  3. Beat the egg whites until stiff.
  4. Gently fold the beaten egg whites into the crab mixture.
  5. Spoon a mound of the mixture onto each bread round.
  6. Place the bread rounds on a cookie sheet.
  7. Put under the broiler until lightly browned.
  8. Serve immediately.
