Ingredients

  • 1 lb. fish fillets
  • 1/2 cup chopped onion
  • 2 tablespoons melted margarine
  • 2 cups diced potatoes
  • 1 cup boiling water
  • 3/4 teaspoon salt
  • pepper to season
  • 2 cups milk
  • 1 can (8 oz.) creamed corn
  • chopped parsley

Instructions

  1. Thaw fish if frozen.
  2. Skin the fish fillets and cut into approximately 1-inch square pieces.
  3. In a 3-quart saucepan, cook chopped onion in melted margarine until tender but not brown.
  4. Add diced potatoes, boiling water, salt, and pepper. Cover and simmer for 10 minutes.
  5. Add the fish pieces and simmer for an additional 5 to 10 minutes, or until the fish flakes easily and potatoes are tender.
  6. Stir in milk and creamed corn.
  7. Heat the chowder until hot but do not let it boil.
  8. Serve hot, garnished with chopped parsley.
