Ingredients

  • 30 sq. graham crackers
  • 1 Tbsp. powdered sugar
  • 1/4 c. margarine
  • 1 small pkg. lemon gelatin
  • 1 c. boiling water
  • 1 can condensed milk
  • 2 Tbsp. lemon juice
  • 1 (8 oz.) cream cheese
  • 1 c. sugar
  • 1 1/2 tsp. vanilla

Instructions

  1. Combine crushed graham crackers, powdered sugar, and melted margarine; press into a 9 x 13-inch pan, reserving some for topping.
  2. Dissolve lemon gelatin in boiling water; let cool until partly set.
  3. In a mixing bowl, beat softened cream cheese until smooth.
  4. Gradually add sugar and vanilla, mixing well.
  5. Stir in chilled condensed milk and lemon juice until combined.
  6. Add the cooled gelatin and mix thoroughly.
  7. Pour the filling over the crust in the pan.
  8. Refrigerate until set, about 4 hours or overnight.
  9. Spread remaining graham cracker mixture on top as a garnish before serving.
