Ingredients

  • 3 cups flour
  • 1 1/2 cups sugar
  • 1 teaspoon cinnamon
  • 1 pinch salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 cups shredded unpeeled zucchini
  • 1 cup raisins
  • 1 cup nuts
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 cup oil

Instructions

  1. In a large bowl, mix together the flour, sugar, cinnamon, salt, baking powder, baking soda, shredded zucchini, raisins, and nuts.
  2. In another bowl, beat together the eggs, vanilla, and oil.
  3. Pour the egg mixture over the flour mixture and stir until thoroughly combined.
  4. Pour the batter into 2 greased loaf pans.
  5. Bake at 350°F for approximately 1 1/2 hours.
