Ingredients

  • 3 Tbsp. butter
  • 1/2 c. medium barley
  • 1 c. chopped celery
  • 1 medium chopped onion
  • 6 c. chicken or beef consomme
  • salt and pepper
  • 1/2 c. cream
  • 1/2 c. thinly sliced mushrooms

Instructions

  1. Saute butter, barley, celery, and chopped onion for 4 minutes.
  2. Add consomme and simmer for 30 to 40 minutes.
  3. Season with salt and pepper to taste.
  4. Stir in the cream before serving.
  5. Garnish with sliced mushrooms if desired.
