Ingredients

  • 6 cups coarsely shredded cabbage
  • 2 cups sliced carrots
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon paprika
  • dash of cayenne
  • 1 1/2 cups shredded sharp Cheddar cheese
  • 1 1/2 cups soft bread crumbs

Instructions

  1. Combine the coarsely shredded cabbage and sliced carrots in a 12 x 8-inch baking dish.
  2. In a saucepan, melt the butter over medium heat.
  3. Stir in the flour and cook for 1-2 minutes until lightly browned.
  4. Gradually whisk in the milk, dry mustard, paprika, and cayenne, and cook until the sauce thickens.
  5. Remove from heat and stir in the shredded sharp Cheddar cheese until melted and smooth.
  6. Pour the cheese sauce over the cabbage and carrots in the baking dish, mixing gently to combine.
  7. Sprinkle the soft bread crumbs evenly over the top.
  8. Bake in a preheated oven at 375°F (190°C) for about 20-30 minutes until bubbly and golden brown on top.
