Ingredients

  • 2 Tbsp. butter
  • 1 small onion, diced
  • 2 Tbsp. flour
  • 3 c. fresh chicken stock
  • 1 Tbsp. fresh lemon juice
  • 1/2 c. sherry
  • 2 garlic cloves, pressed
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 ripe avocados, diced
  • 2 c. half and half
  • parsley, chopped

Instructions

  1. Melt butter in a large saucepan.
  2. Saute diced onion until soft.
  3. Stir in flour until well combined.
  4. Add chicken stock and cook until thickened.
  5. Stir in lemon juice, sherry, pressed garlic, salt, and black pepper, then simmer for 15 minutes.
  6. Blend diced avocados with half and half until smooth.
  7. Add the avocado mixture to the saucepan and simmer for 10 minutes.
  8. Chill the bisque and serve garnished with chopped parsley, or serve hot.
