Ingredients

  • catfish fillets
  • mustard
  • Louisiana hot sauce
  • Tony Chachere Creole seasoning
  • black pepper
  • cracker meal
  • corn meal
  • peanut oil

Instructions

  1. Mix equal parts mustard and Louisiana hot sauce in a large bowl.
  2. Combine equal parts corn meal and cracker meal in a large cake pan.
  3. Add Tony Chachere Creole seasoning and black pepper to the meal mixture according to taste and mix well.
  4. Roll the catfish fillets in the seasoned meal until fully coated.
  5. Sift the meal mixture frequently to remove lumps during coating.
  6. Fry the coated fish fillets in hot peanut oil until golden brown and cooked through.
