Babicka'S Babovka

- Grate the rind of a lemon or orange into the bottom of the mixing bowl.
- Cream the grated rind with sugar and butter until smooth and fluffy.
- Separate the egg yolks from the whites.
- Add the egg yolks and vanilla to the creamed mixture and mix well.
- Sift salt and baking powder into the flour five times for a fine, airy texture.
- Alternately fold in sifted flour and milk into the creamed mixture, beginning and ending with the flour.
- Beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the batter.
- Grease and flour a Bundt pan.
- Sprinkle Hoska crumbs inside the pan if desired.
- Sprinkle chopped walnuts into the batter if desired.
- Pour the batter into the prepared pan.
- Bake in a 375°F (190°C) oven for about 45 minutes or until a toothpick inserted into the center comes out clean.
- Allow the Babovka to cool before removing from the pan and serving.
