Ingredients

  • grated rind from a lemon or an orange
  • 1/4 lb butter
  • 1 1/2 cups sugar
  • 4 egg yolks
  • 1 teaspoon vanilla
  • 2 cups flour, sifted 5 times
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1/4 teaspoon salt
  • 4 egg whites, beaten
  • chopped walnuts (optional)

Instructions

  1. Grate the rind of a lemon or orange into the bottom of the mixing bowl.
  2. Cream the grated rind with sugar and butter until smooth and fluffy.
  3. Separate the egg yolks from the whites.
  4. Add the egg yolks and vanilla to the creamed mixture and mix well.
  5. Sift salt and baking powder into the flour five times for a fine, airy texture.
  6. Alternately fold in sifted flour and milk into the creamed mixture, beginning and ending with the flour.
  7. Beat the egg whites until stiff peaks form.
  8. Gently fold the beaten egg whites into the batter.
  9. Grease and flour a Bundt pan.
  10. Sprinkle Hoska crumbs inside the pan if desired.
  11. Sprinkle chopped walnuts into the batter if desired.
  12. Pour the batter into the prepared pan.
  13. Bake in a 375°F (190°C) oven for about 45 minutes or until a toothpick inserted into the center comes out clean.
  14. Allow the Babovka to cool before removing from the pan and serving.
