Ingredients

  • 1/2 lb. lean slab bacon, diced
  • 3 Tbsp. butter
  • 6 medium Russet potatoes, unpeeled and diced
  • 1 large green pepper, diced
  • 1 medium onion, coarsely chopped
  • 1/2 lb. mushrooms, coarsely chopped
  • salt
  • freshly ground black pepper

Instructions

  1. Saute bacon in a large skillet over low heat until evenly browned and fat is rendered.
  2. Drain the bacon on paper towels and set aside.
  3. Pour off all but 3 tablespoons of bacon drippings and discard the excess.
  4. Melt the butter in the pan with the remaining bacon drippings.
  5. Add the diced potatoes, green pepper, onion, and mushrooms to the pan.
  6. Saute over medium heat until the potatoes are tender, about 20 to 25 minutes, stirring frequently. Add more butter if necessary to prevent sticking.
  7. Add the reserved bacon, salt to taste, and plenty of freshly ground black pepper.
  8. Saute for an additional 5 minutes to allow flavors to blend, then serve warm.

Tips & Substitutions

For a quicker cooking time, consider parboiling the diced potatoes for a few minutes before adding them to the skillet. If you want a vegetarian version, you can substitute the bacon with smoked tempeh or omit it entirely. Adding some diced carrots or zucchini can also enhance the flavor and nutrition of the dish.
