Bahamas Dove

Ingredients

  • 12 dove breasts, cut in bite-sized pieces
  • 1 c. red wine
  • 3 Tbsp. soy sauce
  • 1 clove garlic
  • 1/4 tsp. ginger
  • 1/2 c. vinegar
  • 1/3 c. packed brown sugar
  • 1 medium bell pepper
  • 1 can pineapple chunks and juice
  • 3 Tbsp. oil
  • flour

Instructions

  1. Marinate dove at least 2 hours in wine.
  2. Roll marinated dove in flour; brown in oil.
  3. Mix soy sauce, ginger, vinegar and brown sugar; heat.
  4. Add garlic, pineapple and pepper to dove.
  5. Heat to boiling; add sugar mixture to dove.
  6. Simmer about 45 minutes. Serve with steamed rice.
