Baja Lasagne

- Saute chopped onion in a nonstick skillet.
- Add ready-cut tomatoes, diced green chilies, sliced mushrooms, pinto or kidney beans, chili powder, and cumin. Simmer for 10 minutes.
- Place half of the tortilla strips in a greased baking dish.
- Pour one-quarter of the tomato mixture over the tortilla strips and sprinkle with one-third of the shredded cheese.
- Repeat layers with remaining tortilla strips, tomato mixture, and cheese.
- Spread sour cream over the top layer, then add the remaining tomato mixture and cheese.
- Bake at 350°F (175°C) for 30 minutes until bubbly and golden.
