Ingredients

  • 1/4 cup chopped onion
  • 2 (14 1/2 oz.) cans ready-cut tomatoes
  • 3 oz. diced green chilies
  • 1 cup sliced mushrooms
  • 2 2/3 cups pinto or kidney beans
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 8 corn tortillas, cut in 1-inch strips
  • 8 oz. shredded low-fat Cheddar cheese
  • 1 cup sour cream

Instructions

  1. Saute chopped onion in a nonstick skillet.
  2. Add ready-cut tomatoes, diced green chilies, sliced mushrooms, pinto or kidney beans, chili powder, and cumin. Simmer for 10 minutes.
  3. Place half of the tortilla strips in a greased baking dish.
  4. Pour one-quarter of the tomato mixture over the tortilla strips and sprinkle with one-third of the shredded cheese.
  5. Repeat layers with remaining tortilla strips, tomato mixture, and cheese.
  6. Spread sour cream over the top layer, then add the remaining tomato mixture and cheese.
  7. Bake at 350°F (175°C) for 30 minutes until bubbly and golden.
