Ingredients

  • 3/4 cup Bake-Rite
  • 2 cups sugar
  • 4 eggs
  • 2 cups pumpkin
  • 2/3 cup water
  • 3 1/3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 cup coarsely chopped nuts
  • 2/3 cup raisins

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease the bottoms only of loaf pans.
  3. Mix Bake-Rite and sugar in a large mixing bowl.
  4. Add eggs, water, and pumpkin; stir well.
  5. Incorporate flour, baking soda, cinnamon, and nutmeg into the mixture.
  6. Fold in chopped nuts and raisins.
  7. Pour batter into prepared loaf pans.
  8. Bake for approximately 70 minutes or until a wooden pick inserted in the center comes out clean.
  9. Remove from pans and cool completely before slicing.
