Ingredients

  • 1 lb. catfish fillets
  • salt and pepper to taste
  • 3/4 c. thinly sliced onion
  • 2 Tbsp. butter
  • 1 c. mayonnaise
  • 1/4 c. Dijon mustard
  • 2 Tbsp. dry vermouth
  • 1/2 tsp. Tabasco

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Arrange the catfish fillets in a shallow baking dish and season liberally with salt and pepper.
  3. Cover the fish with thinly sliced onion and dot with butter.
  4. Bake for 20 minutes or until the fish flakes easily with a fork.
  5. Meanwhile, in a small bowl, mix mayonnaise, Dijon mustard, dry vermouth, and Tabasco.
  6. Pour the sauce over the baked fish.
  7. Broil for 2 to 3 minutes until the top is brown and bubbly.
  8. Sprinkle chopped parsley over the finished dish.
  9. Serve hot with lemon wedges.
