Ingredients

  • 10 whole green chilies, seeded
  • 1/2 lb. Jack cheese, cut in 10 strips
  • 1 cup grated Cheddar cheese
  • 3 eggs
  • 1/4 cup flour
  • 3/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • dash of Tabasco sauce

Instructions

  1. Preheat oven to 350°F.
  2. Cut the green chilies in half and remove seeds.
  3. Pat the chilies dry with paper towels.
  4. Slip a strip of Monterey Jack cheese into each chili half.
  5. Lay the stuffed chilies side by side in a greased 9 x 13-inch baking dish.
  6. Sprinkle grated Cheddar cheese over the top before baking.
  7. Bake in the preheated oven until cheese is melted and bubbly, about 30 minutes.
