Fiesta Brunch Casserole

Ingredients

  • 4 (8-inch) flour tortillas
  • butter flavored vegetable cooking spray
  • 1 (15 oz.) can chili (no beans)
  • 3 medium potatoes, drained and peeled
  • 1 cup chopped tomato
  • 4 eggs
  • 1/2 cup chopped green onion
  • 1/2 cup shredded cheese
  • 1 cup salsa (optional)

Instructions

  1. Preheat oven to 400°F.
  2. Spray both halves of each tortilla with cooking spray.
  3. Place 2 tortillas into each of 2 loaf pans, shaping them into bowls.
  4. In a medium saucepan, heat the chili. Stir in the potatoes and cook until thoroughly heated.
  5. Divide the chili mixture among the tortilla bowls.
  6. Use the back of a spoon to make an indentation in each chili-filled tortilla.
  7. Break an egg into each indentation.
  8. Bake for 10 minutes.
  9. Loosely cover with foil and bake for an additional 5 to 10 minutes, or until eggs are done.
  10. Gently remove the tortilla bowls from the pans onto serving plates.
  11. Top with chopped tomato and green onion.
  12. Sprinkle with shredded cheese.
  13. Serve with salsa, if desired.
