Ingredients

  • 1/2 cup butter
  • 12 eggs
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 8 ounces diced green chilies
  • 1 pint cottage cheese
  • 1 pound Jack cheese
  • 1/2 pound diced ham (optional)

Instructions

  1. Beat the eggs lightly in a bowl.
  2. Add flour and baking powder to the eggs and blend well.
  3. Melt the butter and add it to the egg mixture along with diced green chilies, cottage cheese, and Jack cheese. Blend gently.
  4. If using, add diced ham to the mixture.
  5. Pour the mixture into a 9 x 13-inch baking pan.
  6. Bake at 400°F for 15 minutes, then reduce the temperature to 350°F and bake for an additional 35 to 40 minutes until set.
