Ingredients

  • 1 lb hamburger meat
  • 1 small onion, chopped
  • 1 small jar pimento
  • 1 small bell pepper
  • 1 can cream of mushroom soup
  • 1 tsp chili powder
  • jalapeno peppers
  • 2 cups meal (cornmeal)
  • 2 eggs
  • 1 1/2 cups milk
  • 1 Tbsp sugar
  • 1 tsp salt
  • 1/2 tsp bell pepper
  • 1/2 cup oil
  • 1/2 cup cheese
  • 1/2 cup onion

Instructions

  1. Saute hamburger meat, chopped onion, pimento, and bell pepper until meat is browned and vegetables are tender.
  2. Add cream of mushroom soup, chili powder, and sliced jalapeno peppers to the meat mixture. Stir to combine and cook briefly.
  3. Mix all cornbread ingredients together: meal, eggs, milk, sugar, salt, bell pepper, oil, and cheese.
  4. Grease a 9 x 12-inch baking pan and pour half of the cornbread batter into the bottom.
  5. Spread the cooked meat mixture evenly over the first layer of batter.
  6. Pour the remaining cornbread batter over the meat layer, smoothing the top.
  7. Bake at 400°F (200°C) for 20 to 25 minutes until golden brown and a toothpick inserted in the center comes out clean.
