Walter's Mexican Cornbread combines savory cornbread with seasoned ground meat, cheese, and optional jalapenos for a hearty, flavorful dish perfect for family dinners or gatherings.

Ingredients

  • 1 cup yellow cornmeal
  • 2 eggs
  • 1 cup milk
  • 1/2 teaspoon soda
  • 3/4 teaspoon salt
  • 1 (No. 303) can cream-style yellow corn
  • 1/2 cup bacon drippings
  • 1 pound ground meat
  • 1 large onion
  • 1/2 pound Cheddar cheese
  • 4 canned jalapeno peppers

Instructions

  1. Mix cornmeal, eggs, milk, soda, salt, creamed corn, and bacon drippings. Set aside.
  2. Saute ground meat and chopped onion.
  3. Place cooked meat and onion on paper towel to absorb excess grease.
  4. Grease a large black iron skillet and heat it.
  5. Sprinkle a very thin layer of meal in the skillet and let it brown slightly.
