Ingredients

  • 1 ham with bone in
  • whole cloves
  • 1/2 cup dark brown sugar
  • 3 (5 1/2 oz) cans pineapple chunks
  • 1 cup bitter orange marmalade
  • 1 cup bourbon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Peel skin from ham and trim excess fat.
  3. Score the ham in a diamond pattern.
  4. Insert cloves in a cross pattern at the intersections of the scoring.
  5. Pack dark brown sugar over the surface of the ham.
  6. Bake the ham for 30 minutes.
  7. In a pan over medium heat, heat the pineapple juice, marmalade, and pineapple chunks.
  8. Remove from heat and add bourbon to the pineapple sauce.
  9. Remove the ham from the oven and pour the pineapple sauce over it.
  10. Bake for an additional 1.5 hours, basting frequently.
